Soups are delicious, but the true speciality are fish dishes,
like the lobster in olive oil and the steamed mullets dressed with
aromatic herbs. Mollusc and shellfish have been part of Sardinian
dishes since prehistoric times, as witnessed by archaeological findings.
Being Sardinia a land of shepherds, meat dishes are both
varied and succulent. Roast lamb, kid and suckling pig, cooked long
and slow over a oak fire. The taste of this dish, su porcheddu
a sa Sarda, is simply and truly remarkable that a legend from
Barbagia (a Sardinian region) states that pigs have the gift of
speech!
Probably the best known Sardinian food is the pecorino cheese
although, with a large cow and sheep population, it is not the only
one produced in Sardinia. Anyone who likes cheese should try the
ricotta and the provola.
